About this recipe: This is more a hint than a recipe, but I find that homemade vanilla sugar is a thousand times better than shop bought vanilla sugar. It is natural and super easy. I use Tahitian vanilla from Réunion or Madagascan vanilla.


Makes: 1 jar

  • 100g caster sugar
  • 1 vanilla pod

  1. Slice the vanilla pod in two lengthways and place in a sealed jam jar. Cover with caster sugar.
  2. Close the jar tightly and leave for 24 hours. The sugar will soak up the vanilla flavour and can be used in any recipe that calls for vanilla sugar.
  3. You can add more sugar to the jar as needed until the vanilla pod no longer flavours the sugar. This method achieves a pure vanilla flavour, and it is much less expensive than shop bought vanilla sugar.

Other ideas

Because vanilla pods are expensive, I often use half a pod for vanilla sugar, and reserve the other half to flavour my cakes.
