Vanilla sugar

This is more a hint than a recipe, but I find that homemade vanilla sugar is a thousand times better than shop bought vanilla sugar. It is natural and super easy. I use Tahitian vanilla from Réunion or Madagascan vanilla.

Makes: 1 jar
- 100g caster sugar
- 1 vanilla pod

- Slice the vanilla pod in two lengthways and place in a sealed jam jar. Cover with caster sugar.
- Close the jar tightly and leave for 24 hours. The sugar will soak up the vanilla flavour and can be used in any recipe that calls for vanilla sugar.
- You can add more sugar to the jar as needed until the vanilla pod no longer flavours the sugar. This method achieves a pure vanilla flavour, and it is much less expensive than shop bought vanilla sugar.
Other ideas
Because vanilla pods are expensive, I often use half a pod for vanilla sugar, and reserve the other half to flavour my cakes.
