About this recipe:This is perfect for a midweek lunch. I discovered a high fibre tortilla, and some intense lemon basil (usually found in Asian markets), and created this fusion wrap. If you leave off the cheese, you have a vegan wrap!
1 plain or wholemeal tortilla wrap
5 lettuce leaves
2 cherry tomatoes, halved
5 lemon basil leaves
2 slices Cheddar cheese, or any cheese you like

Lay the tortilla on a plate, and line the tortilla with the lettuce leaves, leaving a 1cm border on the sides. Place the tomatoes, basil leaves and Cheddar cheese evenly over the upper 2/3 of the centre of the wrap.
Fold the bottom 1/3 of the wrap over the vegetables. Tuck one side of the wrap over the vegetables and roll securely so that the vegetables will not fall out as you eat.
If you cannot find lemon basil, regular basil would also work a treat in this wrap!
