Colonel's chicken

    I stole this recipe off my father-in-law. It's so simple yet tasty and can be used in so many ways. I'm not usually keen on ginger but love it in this recipe. Serve hot in a baguette with lettuce or serve with rice. Very versatile and flavoursome dish.

    Serves: 4 

    • 4 chicken breast fillets
    • 2 tablespoons curry powder
    • 2 tablespoons ground ginger
    • olive oil, as needed

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Slice the chicken breasts (or leave whole if preferred, adding 5 to 10 minutes to the cooking time). Mix the curry and ginger together.
    2. Completely cover the chicken in the mixture. Heat the oil in a frying pan and when hot add the sliced chicken and cook for 15 minutes, stirring occasionally.
