About this recipe: Paprika adds just enough flavour to delicate sole fillets. This is simple, quick and savoury and goes well with basmati rice.


Serves: 6 

  • 4 tablespoons olive oil
  • 6 sole fillets
  • salt and ground black pepper
  • paprika
  • 1 onion, minced
  • 3 tomatoes, quartered
  • 1 lemon, sliced
  • dried parsley

  1. Preheat the oven to 200 C / Gas 6.
  2. Pour 2 tablespoons of the olive oil into a gratin dish. Lay the sole fillets into the dish, and season with salt, pepper and paprika. Scatter the minced onions and tomato quarters over the fish.
  3. Pour the remaining 2 tablespoons of the olive oil over the fish, lay a lemon slice on each fillet and sprinkle with dried parsley.
  4. Bake in the preheated oven until the fish flakes easily with a fork, about 20 minutes.
