About this recipe:This simple stir fry is full of great flavours! And it's a truly good way to empty your fridge of bits of veg at the end of the week.
1 packet Chinese egg noodles
3 tablespoons vegetable oil
1 onion, chopped
250g minced beef
150g soya beans (edamame)
150g any vegetables - grated carrot, minced leek, salad onion, green beans
1/2 teaspoon Chinese 5 spice powder
1/2 teaspoon ground ginger
1 tablespoon fish sauce
100ml soy sauce

Bring a pan of salted water to the boil and cook the noodles until tender, about 5 minutes. Drain and keep warm.
Meanwhile, heat the oil in a wok over low heat and cook and stir the onion just until translucent, about 3 minutes. Stir in the minced beef, and cook and stir for 5 minutes.
Stir in the soya beans, the chopped vegetables, Chinese 5 spice powder, ground ginger and fish sauce. Stir in the noodles, and cook and stir until the mixture is heated through. Finish by pouring in the soy sauce and serve hot.
All the recipes I find tend to be dull and mild tasting forcing me to tweak it myself but this was spot on!
I didn't have the soy beans and I had slightly different proportions of everything but it turned out very tasty indeed. - 31 Aug 2015
