    This basic budget recipe for banana cake is a wholesome, delicious treat for tea or a snack, easy to make from simple ingredients.

    Serves: 4 

    • 2 tablespoons margarine (15p)
    • 150g granulated sugar (47p)
    • 1 egg (15p)
    • 3 ripe bananas, mashed (27p)
    • 240g plain flour (19p)
    • 1 tablespoon baking powder (25p)
    • 100ml milk (8p)

    1. Preheat oven to 200 C / Gas 6. Lightly grease a 15 x 23cm loaf tin.
    2. With an electric beater, beat margarine and raw sugar until well combined. Add egg and mashed bananas and beat until mixed.
    3. Combine the flour and the baking powder and gently fold into the banana mixture. Add the milk and fold to mix.
    4. Spoon mixture into greased cake tin and bake in the preheated oven for 45 minutes or until cooked and a skewer inserted into the centre comes out clean.
    5. Stand cake in the tin for five minutes before turning it onto a wire rack to cool.
