Vanilla cream filling

    A simple and delicious vanilla cream that you can use as a filling for cakes or pastry cups, or as a topping for butterfly buns or cupcakes.

    Serves: 8 

    • 200ml milk
    • 1 teaspoon vanilla extract
    • 75g icing sugar
    • 3 egg yolks
    • 1 tablespoon cornflour or flour

    1. Combine the milk and vanilla extract; bring to the boil.
    2. Beat egg yolks and icing sugar until light and fluffy. Stir in the cornflour. Gradually pour in hot milk, stirring constantly.
    3. In a double boiler, cook the mixture over medium high heat for 2-4 minutes, stirring constantly. Reduce heat and whisk the mixture for few more minutes. Set aside to cool before using as required.
