4 large potatoes, peeled and cut into pieces
5 large tomatoes, peeled and quartered
1 red pepper, minced
1 tablespoon minced parsley
1 pinch cayenne pepper
salt and ground black pepper

Bring the water to the boil in a large pan. Stir in the potatoes, tomatoes and red pepper and cook over medium heat until the vegetables are tender, about 30 minutes.
Pour off about 1/3 of the water, and puree the soup with a hand-held blender until velvety. Stir in the parsley and cayenne pepper and season with salt and pepper.
