About this recipe: This delicious pureed soup is made of potatoes, tomatoes and red pepper, and gets a kick thanks to cayenne pepper. Serve with toast topped with mozzarella cheese and a pinch of basil.


Serves: 6 

  • 2L lightly salted water
  • 4 large potatoes, peeled and cut into pieces
  • 5 large tomatoes, peeled and quartered
  • 1 red pepper, minced
  • 1 tablespoon minced parsley
  • 1 pinch cayenne pepper
  • salt and ground black pepper

  1. Bring the water to the boil in a large pan. Stir in the potatoes, tomatoes and red pepper and cook over medium heat until the vegetables are tender, about 30 minutes.
  2. Pour off about 1/3 of the water, and puree the soup with a hand-held blender until velvety. Stir in the parsley and cayenne pepper and season with salt and pepper.
