Marinated peppers

    Once made, these tangy marinated peppers can be served alongside meat, or in a salad, or even atop toasted bread as a starter, and you can make them under the grill or on the barbecue. Delicious!

    Serves: 2 

    • 3 tablespoons olive oil
    • 3 tablespoons balsamic vinegar
    • 1 garlic clove, crushed
    • 1 tablespoon minced fresh basil
    • 1 pinch salt and ground black pepper
    • 1 green pepper
    • 1 red pepper

    1. Whisk together the olive oil, balsamic vinegar, garlic, basil, salt and pepper in a bowl.
    2. Preheat the grill or a barbecue for high heat. Cut the green and red pepper into 6 strips, removing the seeds and ribs.
    3. Grill or barbecue the pepper strips for 5 minutes on each side. Remove the charred skin.
    4. Immerse the pepper strips in the marinade, and soak for 10 minutes.
    5. Grill or barbecue the peppers again for about 5 minutes, brushing with the marinade, and turning halfway through the cooking time. Return the cooked peppers to the marinade, and refrigerate overnight.
