About this recipe: Cooking pork loin in milk is a great way to ensure a juicy and flavourful result perfect for serving with seasonal vegetables.


Serves: 5 

  • 1kg boneless pork loin
  • 1 teaspoon prepared mustard
  • 1 teaspoon caraway seeds
  • 5 to 6 allspice berries
  • 1/4 teaspoon ground nutmeg
  • salt and pepper, to taste
  • 250g butter
  • 1L milk

  1. Rub the spices all over the pork and chill in the fridge for 12 hours (or at least 2 hours). The longer the meat has to marinate, the tastier it will be.
  2. In a pan melt the butter and brown the pork on all sides.
  3. In a deep saucepan (or casserole dish) bring the milk to the boil and place the pork inside. Simmer for 1 hour, gradually add butter as the milk evaporates. Stir often, because the mixture will thicken and the pork may stick to the bottom.
  4. Slice the pork, place on a platter and pour sauce over. Serve with potatoes and green salad.
