Potato gratin with Gruyère cheese

    This is a rich side dish and not something for everyday cooking, rather for special occasions when you have many guests. But you can easily cut all the ingredients in half.

    Serves: 16 

    • 3kg baking potatoes, peeled and cut into 5mm slices
    • 700ml single cream
    • 350g grated Gruyère cheese
    • salt and pepper
    • 4 tablespoons minced fresh parsley

    1. Preheat oven to 200 C / Gas 6. Grease a large gratin dish or if you don't have one that is large enough, use two dishes (or, if your dish has higher sides, you can add an extra layer of potatoes).
    2. Cover the bottom of the dish with half of the potato slices and let them overlap a little. Season well with salt and pepper. Drizzle with half of the cheese cream and cheese, then add a second layer with the remaining potatoes, drizzle with cream and sprinkle with cheese.
    3. Bake in the preheated oven, uncovered, for 30 minutes. Then reduce oven temperature to 175 C / Gas 3-4 and bake till the potatoes are soft and the top is nicely browned, about a further 45 minutes. Remove from the oven and let rest for 10 minutes, then sprinkle with parsley and serve.
