Beautiful cod prepared with vegetables in a white wine sauce. A lean, healthy dish particularly rich in vitamins B and C. This fish recipe is quick to prepare, nutritious and rich in flavour.

400g fresh cod fillet, cubed
1 tablespoon lemon juice
1 tablespoon olive oil
100g onion, peeled and thinly sliced
1 green or red pepper
2 green or red chillies
100ml dry white wine
8 black olives, pitted
1 tablespoon chopped garlic
1/2 teaspoon paprika
1 tablespoon fresh chopped coriander

Sprinkle cubed cod with lemon juice and refrigerate in a covered container while preparing vegetables.
Heat oil in a medium frying pan and fry onion until soft and translucent. Meanwhile, wash tomatoes and pepper. Cut each tomato lengthways into 4 slices, then each slice in half; halve pepper, remove seeds and cut into strips; halve chillies, scrape out seeds and finely chop.
Add tomatoes, pepper, chillies and olives to onion in pan; Pour in white wine and cook over high heat for 2 minutes; add cubed cod, sprinkle with paprika and reduce heat to medium. Cover and cook for another 5 minutes.
Sprinkle with fresh chopped coriander and serve with steamed potatoes, bulgur or rice.
