Halloween raspberries with worms

    Molecular gastronomy at your service for a fab Halloween party!! A little bit of agar-agar for the worms, orange juice and fresh fruit for a healthy Halloween treat. If agar flakes aren't available at your local supermarket, you can buy online or at Japanese and other Asian grocery stores.

    Makes: 1 plate

    • 200g fresh raspberries
    • 100ml orange juice
    • 1g agar agar flakes
    • a small bowl of ice water

    1. Pour orange juice into saucepan and bring to the boil. When orange juice boils, add the agar agar and whisk together.
    2. Using a syringe, extract some of the agar and juice mixture from the saucepan and put syringe to cool in ice water; let cool 5 minutes.
    3. Arrange raspberries on the serving plate. Using syringe, eject small 'worms' of mixture onto plate and arrange so that they're 'attacking' the raspberries. Taste...it's frightfully good!
