Sweet potato and marshmallow gratin

    Serves: 6 

    • 1kg sweet potatoes
    • salt and freshly ground pepper to taste
    • 1 pinch ground cinnamon
    • ½ teaspoon nutmeg
    • 150g mini marshmallows

    1. Preheat oven to 150 C / Gas 2 and lightly grease a gratin dish.
    2. Peel the sweet potatoes and cut into large (2cm thick) pieces. Place in the steamer basket of your pressure cooker. Pour some water into cooker and cook potatoes for 20 minutes. If you don't own a pressure cooker, you can also cook them in the steamer basket of a regular pot.
    3. Place cooked sweet potatoes in the prepared gratin dish. Season with salt, pepper, cinnamon and nutmeg. Cover evenly with marshmallows and bake in the preheated oven until marshmallows begin to brown, about 10 minutes.


    Ideally you would use yams for this dish but sweet potatoes will work too. They are less fragrant than the yams, so if using sweet potatoes add a pinch of cinnamon and nutmeg.
