About this recipe:Financiers are a sort of light and moist French tea cake. These financiers aux amandes are a classic and perfect alongside your favourite cuppa. They're traditionally baked in rectangular shaped moulds which make the finished cakes look like gold bars, hence the name!
Makes: 12 financiers
130g ground almonds
275g icing sugar
125g plain flour
1 teaspoon baking powder
150g butter, melted
7 egg whites
1 tablespoon vanilla extract

Preheat oven to 220 C / Gas 7.
Combine almonds, icing sugar, flour and baking powder.
Melt butter in a saucepan until it begins to brown; remove from heat.
Add egg whites to almond mixture and mix, then fold in the browned butter. Divide mixture evenly between silicone financier moulds.
Bake in preheated oven for 20 minutes; financiers should be golden but not too dark.
If you don't have a financier mould, you can use mini tart tins or cupcake cases. Watch baking time as it may vary depending on the size of mould used. Financier moulds are available online and in some speciality shops.
