French fish soup with summer vegetables

    A light soup that will fill you up without filling you out! This soup is very common in French homes and easy to make quickly with whatever white fish and summer vegetables you have at hand. Serve with fresh basil leaves, or with croutons and a spoonful of pesto.

    Ingredients
    Serves: 6 

    • 2 tablespoons olive oil
    • 2 medium onions, sliced into wedges
    • 2 cloves garlic, minced
    • 3 potatoes, chopped into bite-size pieces
    • 2 red peppers, chopped into bite-size pieces
    • 5 tomatoes, cubed
    • 6 fresh basil leaves
    • 1/2 litre water
    • 6 courgettes, sliced
    • 4 firm white fish fillets (such as cod, halibut or monkfish), cubed

    Method

    1. Heat olive oil in soup pot or pressure cooker; add onions and garlic and cook until soft. Stir in the potatoes, peppers and tomatoes. Add water and basil; bring to the boil and simmer for 10 minutes.
    2. Scoop out 3 or 4 ladles of the vegetable mixture; puree the remaining vegetables in the pot with an immersion blender. Return reserved vegetables to the soup, cover pot with a lid and simmer for 20 minutes.
    3. Add fish; reduce heat to low and simmer for 10 minutes or until fish is cooked through.
