Vanilla plum jam


    My grandmother always served this jam made with plums from her garden along with her afternoon tea cakes.

    Makes: 2 medium size jars

    • 1.5kg pitted plums
    • 300ml water
    • 1 lemon, juiced
    • 1kg caster sugar
    • 1 vanilla pod, split lengthways

    1. Put plums in a large pot with water, lemon juice and sugar over high heat; clip a sugar thermometer to the pot.
    2. Add vanilla pod halves; the temperature will go up, down, then back up.
    3. When temperature reaches 105 degrees C, remove from heat and pour into sterilised jam jars. Seal jars while jam is still hot.
