Veal mince curry

    Quick and easy to prepare, this recipe is confirmed as a delicious keeper each time it's prepared. Serve this with basmati rice and spinach, green beans or pineapple chunks.

    Serves: 4 

    • 400g veal mince
    • 1 tablespoon olive oil
    • 100g chopped onion
    • 1 tablespoon minced garlic
    • 2 tablespoons curry powder
    • 1/2 teaspoon ground turmeric
    • 250g natural yoghurt
    • 1 tablespoon soured cream
    • 2 large tablespoons sultanas
    • 1 tablespoon almond flakes
    • 1 tablespoon fresh minced coriander (optional)
    • freshly ground black pepper to taste

    1. Heat oil in a wok or large frying pan. Add veal with onion and garlic and cook until browned, 3 to 4 minutes.
    2. Add curry powder and turmeric and mix well; cook 1 minutes, stirring constantly.
    3. Add yoghurt, soured cream and sultanas; cover and let simmer for 3 minutes. Stir together and serve sprinkled with almonds, fresh coriander and black pepper.
