Delicious potato cakes


    These delicious potato cakes are a simple and tasty way to use up leftover mashed potatoes. This is my mum's recipe and I remember how much we always craved them!

    Serves: 3 

    • 6 potatoes, boiled and mashed
    • 1 egg
    • 110g breadcrumbs
    • 1 tablespoon finely chopped fresh dill or parsley
    • salt and pepper, to taste
    • oil, as needed for cooking

    1. Place the potatoes in a mixing bowl and add the egg, 2 tablespoons of the breadcrumbs, herbs and season to taste. Mash the ingredients together, adding some more breadcrumbs if the mixture is too wet.
    2. Place the remaining breadcrumbs on a plate. Form potato mixture into 1cm thick and 3cm in diameter potato cakes. Coat in breadcrumbs.
    3. Heat the oil in a frying pan then fry the cakes on both sides until golden brown. Remove from the pan and serve warm.


    It's best to use leftover mashed potato that has been in the fridge overnight. Perfect if it already has some butter or cream in it.
