Easy roast chicken with baby potatoes and thyme

    Baby potatoes, seasoned with fresh thyme are roasted beside a whole chicken for a quick and easy meal. All you need is a green salad on the side and you're all set!

    Ingredients
    Serves: 6 

    • 1 whole chicken
    • 1 knob butter
    • 750g baby potatoes
    • 1 tablespoon olive oil
    • 15 sprigs fresh thyme
    • salt and ground black pepper to taste

    Method

    1. Preheat oven to 200 C / Gas 6.
    2. Place chicken on a rack and set the rack into a deep roasting tin; rub the skin with butter and season with salt and pepper.
    3. Toss potatoes in a bowl with oil, salt and pepper. Arrange the baby potatoes under the chicken in the roasting tin. Scatter sprigs of thyme on top of potatoes.
    4. Roast in preheated oven for 1 1/2 hours, basting the chicken with the pan juices every 30 minutes or so until chicken is cooked through.
