Gingerbread toasts with apples, raisins and cider

    As soon as the end of the year approaches I switch to cocooning and I like preparing meals and snacks like this comforting recipe using toasted pieces of Christmas gingerbread. Use pieces of a gingerbread house, homemade or shop-bought, any will do nicely!

    Serves: 4 

    • 40g raisins
    • 400ml medium-dry cider
    • 2 Golden Delicious apples
    • 4 slices gingerbread
    • 1/2 teaspoon ground cinnamon
    • 20g butter
    • 15g dark brown soft sugar

    1. Soak raisins in a bowl in 100ml cider for 1 hour. Meanwhile wash, peel and core apples; cut into quarters, then into thin slices.
    2. Melt butter in a large frying pan; add apples and sprinkle with cinnamon and brown sugar, then stir in plump raisins with the soaking cider and let simmer for 15 minutes.
    3. Meanwhile, prepare plates: Toast gingerbread slices and place on plates. Top with apple slices and a few plump raisins; drizzle with a bit of the cooking liquid 'sauce''. Voila, ready to eat!
