In a medium bowl beat egg whites until stiff peaks form, then stir in icing sugar and vanilla sugar. Add cinnamon and ground almonds and mix until you have a sticky biscuit dough which you can form into balls.
Roll out the biscuit dough on baking parchment, to a thickness of about 1cm. Roll up, wrapped tightly in cling film, and place in fridge to chill for at least 30 minutes.
Preheat oven to 100 C / Gas mark 1/2.
Roll out chilled dough and cut out biscuits using star shaped biscuit cutters. Place stars on baking tray lined with baking parchment.
Bake in preheated oven for 15 minutes. Let cool on tray for 5 minutes.
Meanwhile, prepare the glaze: In a bowl, beat 1 egg white into stiff peaks; add icing sugar 1 tablespoonful at a time, mixing after each addition, until mixture reaches desired creamy consistency.
Once the star biscuits have cooled, brush or spread with glaze and let dry for 24 hours before putting in an airtight container.
