Place each fish fillet in the centre of a square piece of baking parchment. Add tomatoes and parsley and season with salt and pepper. Drizzle with a bit of lemon juice and fold parchment corners in towards the centre; twist all together in the centre to seal parcels.
Cook in the microwave for 2 minutes. Be careful when unwrapping, the escaping steam can be very hot!
