Parsnip and courgettes are two vegetables that cook quickly, so you don't need to plan much in advance for this super easy, healthy side dish. It goes well with red meats.

olive oil
1kg parsnips, cleaned and sliced
1kg courgette, cleaned and sliced
3 cloves garlic, minced
salt and freshly ground black pepper to taste

Preheat oven to 180 C / Gas 4.
Line a baking tray with aluminium foil and brush with olive oil to lightly coat.
Place sliced parsnips and courgettes on tray, spread out and drizzle with olive oil. Toss so that all of the veg are well coated. Sprinkle with garlic, salt and pepper.
Bake in preheated oven until veg are tender and beginning to brown slightly, about 25 minutes. To serve, transfer veg on a decorative platter and garnish with sprigs of fresh parsley.
