Chocolate orange shortbread

    This crisp shortbread is made with dark orange chocolate.

    Makes: 20 biscuits

    • 210g plain flour
    • 2 teaspoons baking powder
    • 5 egg yolks
    • 150g caster sugar
    • 140g butter, softened
    • 130g dark chocolate with orange, chopped
    • a pinch of salt

    1. In a small bowl combine flour and baking powder. In another bowl beat egg yolks with sugar until colour lightens; add butter, flour mixture, chocolate and salt.
    2. Transfer to lightly floured work surface. Mix with your hands till combined and form balls of about 5cm diameter.
    3. Place biscuit rounds on a large floured plate. Cover and chill for at least 1 hour in refrigerator.
    4. Preheat oven to 150 C / Gas 2. Roll out biscuits to flat rounds, and cut out with a biscuit cutter or a small glass.
    5. Bake in the preheated oven for about 20 minutes.
