Easy chocolate cereal cakes

    Use your favourite cereal to make these moreish little cakes. Perfect for making with kids with a bit of supervision. Make them plain, as stated, or get creative and add some dried fruits or nuts to the mix, or top each cake with sugar strands before setting.

    • 115g plain chocolate
    • 75g butter, melted
    • 40g icing sugar
    • 100g cereal (e.g. Kellogg's Special K®, cornflakes, crisped rice)

    1. Lay out 15 small paper cases on a tray.
    2. In a small saucepan over low heat melt butter and stir in chocolate. Remove from heat, add sugar and mix well with a whisk until smooth. Add cereal and coat with chocolate mixture.
    3. Place a heaping tablespoon chocolate-coated cereal in each paper case. Chill in the fridge for at least 1 hour, till set.
