Whisk together the lemon juice, rice vinegar, 3 tablespoons of the olive oil, honey, Dijon mustard, garlic, thyme and oregano. Season generously with salt and pepper.
Toss the rocket with the red onion. Divide the salad onto 4 salad plates.
Heat a dry non-stick frying pan over medium heat. Brush the halloumi cheese slices with the remaining 1 tablespoon olive oil, and fry until deeply browned, then turn and continue to cook until deeply browned, 1-2 minutes each side.
Place a halloumi slice on each salad, drizzle with the lemon dressing and serve immediately.
If you are already using the grill or barbecue, you can cook the halloumi very easily in a tray under the grill or by placing the halloumi directly on the barbecue grate.
