Fried halloumi and rocket salad

    A tangy garlic lemon vinaigrette plays well with mild halloumi cheese, which sears nicely without melting, over a bed of spicy rocket.

    Serves: 4 

    • 1 1/2 tablespoons fresh lemon juice
    • 1 teaspoon rice vinegar
    • 4 tablespoons olive oil
    • 1 teaspoon honey
    • 1/2 teaspoon Dijon mustard
    • 2 garlic cloves, minced
    • 1/2 teaspoon fresh thyme leaves
    • 1/4 teaspoon fresh oregano leaves
    • salt and ground black pepper
    • 100g rocket
    • 1 small red onion, thinly sliced
    • 120g halloumi cheese, cut into 4 slices

    1. Whisk together the lemon juice, rice vinegar, 3 tablespoons of the olive oil, honey, Dijon mustard, garlic, thyme and oregano. Season generously with salt and pepper.
    2. Toss the rocket with the red onion. Divide the salad onto 4 salad plates.
    3. Heat a dry non-stick frying pan over medium heat. Brush the halloumi cheese slices with the remaining 1 tablespoon olive oil, and fry until deeply browned, then turn and continue to cook until deeply browned, 1-2 minutes each side.
    4. Place a halloumi slice on each salad, drizzle with the lemon dressing and serve immediately.


    If you are already using the grill or barbecue, you can cook the halloumi very easily in a tray under the grill or by placing the halloumi directly on the barbecue grate.

    Needed a rapid supper recipe involving rocket and halloumi (already in the fridge) found and made this - absolutely delicious. Had all the ingredients to hand although no fresh but dried herbs. Loved the zing, the speed and the satisfaction. will be making again  -  17 Nov 2015
