Herring salad

    This is my father's recipe for a Polish herring salad. Pickled herring fillets are cubed and served with potatoes, eggs and apple. It is utterly delicious and a fantastic and unique alternative to potato salad. Enjoy as a side dish as part of a larger meal.

    Serves: 6 

    • 250g soused herring fillets or pickled rollmops
    • 4 large potatoes, washed and quartered (unpeeled)
    • 1 large onion, diced
    • 2 hard-boiled eggs, diced
    • salt, to taste
    • 1 large tart apple, diced
    • 100g pickled cucumbers, sliced
    • For the dressing
    • 200g mayonnaise
    • 100g low fat yoghurt
    • 1 pinch white pepper
    • juice of 1/2 lemon
    • 1 teaspoon chopped fresh parsley
    • 1 tablespoon mustard or horseradish

    1. Soak the herring fillets in cold water for 1 hour; slice into cubes.
    2. Cook the potatoes in salted water for 20 to 25 minutes. Drain; peel and slice the cooked potatoes.
    3. In a large bowl, combine the onion, eggs, apple and pickles. Add potatoes and mix gently.
    4. For the dressing:

    5. Mix mayonnaise with yoghurt. Stir in lemon juice, pepper, parsley and mustard. If the dressing isn't tangy enough, add more lemon juice. If too tangy, add a pinch of sugar.
    6. Pour the dressing over salad and gently toss to coat.


    If you end up with too much dressing, serve it as a dip for fresh veggies.
