Almond and pear cake

    Super simple and simply delicious pear cake enriched with almonds. Delicious for a mid-morning or afternoon pick me up with coffee or tea.

    Serves: 6 

    • 150g plain flour
    • 125g butter
    • 150g caster sugar
    • 4 eggs
    • 100g ground almonds
    • 1 sachet baking powder
    • 2 pears - cored, peeled and cut into slices

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 C / Gas 4. Lightly grease a 23cm round cake tin.
    2. Put all ingredients except for the pears in a blender and mix together.
    3. Arrange pears in bottom of tin, pour cake mixture on top.
    4. Bake in preheated oven for 40 minutes. Cool in the tin and slice as is, or invert onto a serving plate.


    For more almond flavour, add 1/2 teaspoon of almond extract to the cake mixture. You can also sprinkle flaked almonds over the bottom of the tin before adding the pears.

    I am an unashamedly lazy baker and a big fan of cakes that involve "putting all ingredients into a mixer" but come out tasting like lots of time was put in. This was excellent - moist, tasty and one that I will definitely do again. I chopped up the pear into small pieces and mixed it in with the cake mix. Delicious.  -  21 Mar 2015


    I chopped the pears up also as I had some ripe from my garden, I also put some raisins and saltanas that I had stewing in port, came out beautifully moist - will be making this again !!  -  22 Sep 2015
