French yoghurt cake


    This is an easy loaf cake that you can make with any flavoured fruit yoghurt.

    Serves: 8 

    • 3 eggs
    • 600g plain flour
    • 375g caster sugar
    • 125ml vegetable oil
    • 1 pinch of salt
    • 2 tablespoons vanilla sugar
    • 1/2 teaspoon baking powder
    • 125ml fruit yoghurt, any flavour

    1. Preheat the oven to 180 C / Gas 4. Grease a large 900g (2 lb) loaf tin.
    2. Beat eggs and sugar until frothy. Add oil and stir.
    3. Add the flour, baking powder and vanilla sugar. Mix until smooth. Add a pinch of salt.
    4. Tip mixture in the prepared tin. Bake until browned and a tester comes out clean, 40 to 45 minutes.
