About this recipe: Cutting into this marbled loaf cake reveals its excellent marbling throughout. Delicious with a cuppa.


Serves: 6 

  • 200g butter, softened
  • 200g caster sugar
  • 1/2 teaspoon vanilla sugar or vanilla extract
  • 5 eggs
  • 250g plain flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons unsweetened cocoa powder
  • 1 pinch salt

  1. Preheat oven to 210 C / Gas 6-7.
  2. Cream butter with caster sugar and salt. Add vanilla sugar or extract and the eggs, whisking vigorously. Sift flour with baking powder and stir into mixture till just combined.
  3. Divide cake mixture in half. Add cocoa to one half of the mixture. In a greased and floured loaf tin, alternate layers of white mixture with layers of cocoa mixture. Run a knife through the layers.
  4. Bake in preheated oven for 20 minutes, then reduce oven heat to 180 C / Gas 4 and bake another 30 minutes.
