100g wholemeal flour
20g plain flour
1/2 teaspoon salt

In a bowl combine flour with salt and mix. Add tepid water, a bit at a time, mixing between each addition until mixture has consistency of a soft but firm dough (not too firm, otherwise the chapatis will be tough).
Tear off small pieces of dough and roll into balls with your hands, about the size of a walnut. On a floured work surface, roll out each ball into a 'pancake' with a rolling pin.
Heat a frying pan to medium high heat. One by one, place chapatis in pan; when bubbles form on top, turn and reduce heat; cook on other side. When cooked through, hold chapati directly over gas cooker flame, turning so as not to burn. Brush with ghee or butter and serve.
