    An easy recipe for the traditional Indian flatbread, chapati. If you can find chapati flour, use that instead of the wholemeal and plain flours. Look for chapati flour in your local Asian market.

    Makes: 6 chapati

    • 100g wholemeal flour
    • 20g plain flour
    • 1/2 teaspoon salt
    • ghee or melted butter

    1. In a bowl combine flour with salt and mix. Add tepid water, a bit at a time, mixing between each addition until mixture has consistency of a soft but firm dough (not too firm, otherwise the chapatis will be tough).
    2. Tear off small pieces of dough and roll into balls with your hands, about the size of a walnut. On a floured work surface, roll out each ball into a 'pancake' with a rolling pin.
    3. Heat a frying pan to medium high heat. One by one, place chapatis in pan; when bubbles form on top, turn and reduce heat; cook on other side. When cooked through, hold chapati directly over gas cooker flame, turning so as not to burn. Brush with ghee or butter and serve.

    Unbelievably easy! I made these with spelt flour, will never buy chapatis again as these are much tastier and cost next to nothing.  -  20 May 2015
