Herring chunks are coated in prepared mustard and marinated in sweet and tangy sauce. In Poland this is a popular dish for Carnival and Christmas parties.

1 onion, sliced
3 marinated herring fillets
2 small pickled cucumbers, sliced
2 tablespoons prepared mustard
1 tablespoon white wine vinegar
1 tablespoon vegatable oil
2 tablespoons water from pickles
Method Prep:15min › Extra time:2hr chilling › Ready in:2hr15min
In a small bowl, place onion and cover with boiling water. Set aside for 2 minutes, then drain.
Cut the herrings into small pieces. Coat with prepared mustard. Lay 1/3 of the herrings into a jar, arrange 1/3 pickles and onion, repeat the layers until all ingredients have been used.
Combine vinegar, oil and pickled water and pour into the jar.
