Marinated Polish herring

    Herring chunks are coated in prepared mustard and marinated in sweet and tangy sauce. In Poland this is a popular dish for Carnival and Christmas parties.

    Serves: 4 

    • 1 onion, sliced
    • 3 marinated herring fillets
    • 2 small pickled cucumbers, sliced
    • 2 tablespoons prepared mustard
    • 1 tablespoon white wine vinegar
    • 1 tablespoon vegatable oil
    • 2 tablespoons water from pickles

    1. In a small bowl, place onion and cover with boiling water. Set aside for 2 minutes, then drain.
    2. Cut the herrings into small pieces. Coat with prepared mustard. Lay 1/3 of the herrings into a jar, arrange 1/3 pickles and onion, repeat the layers until all ingredients have been used.
    3. Combine vinegar, oil and pickled water and pour into the jar.
    4. Refrigerate for at least 2 hours.
