Prawn and tomato starter

    Very simple yet elegant starter. You can easily double the amount for more people.

    Serves: 4 

    • 3 fresh tomatoes, peeled, seeded and diced
    • 5 sprigs fresh thyme
    • salt to taste
    • 4 cooked prawns, peeled and deveined

    1. Put tomatoes in a small bowl. Sprinkle with salt and allow to sit to release liquid for at least 5 minutes. Remove leaves from 4 sprigs of thyme and add to tomatoes in bowl, Stir together.
    2. Arrange tomato mixture in a circle on a serving plate. Flatten with the back of a spoon. Place prawns on top and garnish with a thyme sprig.
