Roast potato roses

    A pretty way to make simple roast potatoes look quite special.

    Serves: 4 

    • 8 large potatoes, peeled
    • 1 to 2 pinces coarse salt
    • pepper
    • 1 teaspoon minced dried rosemary
    • 60g butter, diced
    • 60g butter, melted

    1. Preheat your oven to 200 C / Gas 6. Butter an oven proof dish. Cut each potato into 2 to 3 pieces of 2cm width.
    2. Cut each potato into a spiral using a vegetable peeler.
    3. Shape into roses.
    4. Place roses in the dish. Salt, pepper and sprinkle with rosemary. Dot each rose with diced butter.
    5. Roast in the preheated oven for 25 minutes and drizzle with the melted butter during baking.
    6. Remove from the oven and carefully transfer to a serving dish.
