Indian vegan pancakes

    An Indian sweet recipe for pancakes with no eggs, milk or any dairy hence ideal for vegans! Serve with your favourite jam.

    Ingredients
    Serves: 2 

    • 1 piece palm sugar or jaggery
    • 150ml water
    • 5 tablespoons plain flour
    • a little oil

    Method

    1. In a large bowl soak sugar in warm water for 30 minutes to dissolve and melt.
    2. Add flour and stir till smooth.
    3. Heat oil in a medium frying pan; when hot, pour in a ladleful of pancake batter. When top is set, flip the pancake. Cook until golden brown on both sides, about 3 minutes per side.
