White fish in vegetable sauce

    Great dish for using up any white fish in the back of your freezer. Serve with vegetables for a complete meal.

    Serves: 4 

    • 500g white fish fillets
    • 2 tablespoons vegetable oil
    • salt and pepper, to taste
    • For the vegetable sauce
    • 2 tablespoons vegetable oil
    • 1 stick celery, sliced
    • 2 carrots, grated
    • 1 root parsley, grated
    • 2 onions, chopped
    • 3 tablespoons water
    • salt and pepper, to taste
    • 130g tomato puree
    • 1/2 teaspoon caster sugar
    • 1 tablespoon lemon juice
    • 1/2 teaspoon paprika
    • fresh parsley, to taste

    1. Cut the fish into 5cm pieces. Heat the oil over medium-high heat and fry the fish for few minutes on both sides. Season with salt and pepper. Place on a serving platter.
    2. For the vegetable sauce:

    3. Heat the oil and cook and stir the celery, carrot and root parsley. Add onion, 3 tablespoons water and salt, cover and cook for 15 minutes. Stir in tomato purée. Season with salt, pepper, sugar, lemon juice and paprika. Remove from heat, allow to cool.
    4. Pour the sauce over fish and garnish with parsley. Serve hot or cold.
