Ginger chai tea

    Be transported to India with this warming, aromatic chai tea recipe. Chai recipes vary greatly, and families often make their own masalas to flavour their chai. This recipe features ginger, and to it you could add a few cardamom pods, a cinnamon stick, or even ground fennel seeds.

    Serves: 4 

    • 300ml water
    • 1 small piece root ginger, grated
    • 1 1/2 teaspoons black tea
    • 500ml milk
    • 3 tablespoons caster sugar

    1. Bring the water to the boil with the ginger and the black tea, and boil for 2 minutes.
    2. Pour in the milk, and simmer over medium heat for 3 or 4 minutes. Stir in the sugar, and simmer a few minutes more until the tea begins to colour the milk, about 2 minutes.
    3. Pour the chai through a sieve to serve.
