Sauerkraut soup

    Delicious, tangy soup cooked with pork ribs; hearty and flavourful. Add diced potatoes along with carrot if you want to make it more filling.

    Serves: 6 

    • 800g pork ribs
    • 4L water
    • salt and pepper, to taste
    • 1kg sauerkraut
    • 1 large carrot, grated
    • sugar, to taste
    • 4 bay leaves
    • 6 allspice berries
    • 2 tablespoons margarine or butter
    • 2 tablespoons plain flour

    1. Rinse and cut the ribs into strips. Bring the 4L of water to the boil, add some salt, and add the pork. Cook until an even dark pink colour. Skim off any scum.
    2. Rinse and chop the sauerkraut. Add to the pot, mix in grated carrot, sugar, bay leaf and allspice. Simmer until sauerkraut is soft.
    3. Melt the butter in a separate pan then mix in flour and stir constantly until the mixture is golden brown. Stir into the soup. Season to taste.
