200g caster sugar
150g plain flour
110g potato starch
1 1/2 teaspoons baking powder
220g margarine or butter, melted and cooled
1 teaspoon vanilla extract
2 tablespoons cocoa powder
icing sugar, for dusting

Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin.
Beat eggs with sugar. Mix in flours, baking powder and cooled, melted margarine or butter. Stir in vanilla.
Divide the mixture into 3 parts. Stir the cocoa into one part of mixture, mix well. First pour in 1 part of the plain cake mixture, then add the cocoa mixture, then cover with the second plain cake mixture.
Bake for 1 hour until risen and a toothpick inserted in the centre comes out clean. Allow to cool. Dust with icing sugar and serve.
Potato starch is different than potato flour, which is made from the whole potato. Note this when buying ingredients.
