Gingerbread cut out biscuits

    My favourite gingerbread recipe. The first time I made them, I felt anxious that the dough wouldn't come out. I succeeded and ever since I have been baking them!

    Serves: 15 

    • 250g plain flour
    • 6 tablespoons honey
    • 150g caster sugar
    • 1 teaspoon bicarbonate of soda
    • 2 teaspoons mixed spice
    • 2 tablespoons butter, softened
    • 1 egg

    1. Heat up honey in a saucepan over high heat.
    2. Preheat the oven to 175 C / Gas 3-4.
    3. In a large bowl, sift the flour, make a well in the centre and pour in honey. Mix the dough with a spoon. You can use an electric mixer with a hook.
    4. Mix in sugar, baking soda, gingerbread spice, butter and egg. Knead the dough until soft and smooth.
    5. Roll out to 5mm thickness and cut out any desired shapes.
    6. Place the cookies on a baking sheet lined with parchment. Bake until lightly coloured, 8 to 10 minutes.
