About this recipe: This simple onion jam is a little bit sweet, a little bit acidic, and melts in the mouth. It's perfect on pizzas, in tarts or as a condiment on burgers or sandwiches.


Makes: 1 small jar

  • 1 tablespoon olive oil
  • 500g onions, chopped
  • 1 tablespoon caster sugar
  • 2 tablespoons balsamic vinegar

  1. Heat the olive oil in a frying pan over low heat and cook and stir the onions until translucent, about 5 to 10 minutes.
  2. Stir in the caster sugar and balsamic vinegar. Cover and cook over very low heat, stirring occasionally, until the onions are very soft and the jam is very reduced, about 50 minutes.
  3. Seal in a sterilised jar, or simply place in a covered jar and store in the fridge.
