Ellie's yummy lemon cake

    This is a quick and easy recipe for lemon drizzle lovers! The cake is flavoured with lemon zest, and a drizzle of sweetened lemon juice is added after baking.

    Serves: 6 

    • 110g butter
    • 110g caster sugar
    • 2 eggs
    • 110g self-raising flour
    • 1 lemon, zested and juiced
    • 1 tablespoon caster sugar

    1. Preheat the oven to 180 C / Gas 4. Grease a 20cm round cake tin.
    2. Beat the butter and the 110g caster sugar in a mixing bowl. Beat the eggs into the mixture until combined. Add flour and lemon zest. Spoon the mixture into the cake tin.
    3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 20 minutes. Leave the cake to cool for 10 minutes.
    4. Mix the 1 tablespoon caster sugar and the lemon juice together. Then sprinkle it onto the cake.


    Use the same lemon for the zest and juice.
