Mexican beef casserole

    A tasty Mexican dish that can be adapted to make it as hot as you like.

    Serves: 4 

    • 500g minced beef
    • 220g long grain rice (cooked)
    • 1 tin tomato soup
    • 1 packet taco seasoning
    • 4 tomatoes, chopped
    • 60g Cheddar cheese, grated
    • 60g tortilla chips, crushed

    1. Preheat the oven to 180 C / Gas 4.
    2. Brown the minced beef in a frying pan over medium heat. Drain off the fat. Stir in the rice, soup and taco seasoning.
    3. Put the mixture into an ovenproof dish. Top with the tomatoes, cheese and tortilla chips.
    4. Bake in the preheated oven until heated through, about 30 minutes.

    Other ideas

    Chillies can be added if you want it that little bit hotter.
