Place the flour on a chopping board or clean countertop. Use your hands to make a well in the centre.
In a separate bowl, combine the olive oil and the eggs. Whisk well to mix.
Pour the oil and egg mixture in the well of flour and with a fork slowly start mixing the ingredients. Start with the flour that is in the inside of the well and gradually incorporate the flour that is on the outside. This helps to keep all the liquid ingredients inside instead of spilling out and causing a bigger mess! Once it starts to become thick, use your hands to knead it into dough. If it seems dry, add water, little by little. It is ready once it becomes tender and elastic.
Form the dough into a ball, wrap tightly with plastic wrap and let it rest for 30 minutes.
Divide the dough into 4-6 pieces (whichever you feel most comfortable working with). Using a pasta machine roll out each section of the dough on the largest setting and then continue to roll out with the machine until the desired thickness is obtained. Then use whichever pasta shape you want and roll the dough through there.
Cook the spaghetti in boiling, lightly salted water. Fresh pasta should only take a few minutes to cook. It's ready when it floats to the top.
If you are not going to use it right away, make sure you lay it out on a cutting board that is lightly dusted with flour. This will help avoid sticking. Sprinkle a small amount of flour on top and cover with a towel.
