Pasta amatriciana

    This slightly spicy Italian pasta sauce works well with bucatini or spaghetti. It's best to use thick bacon or bacon lardons.

    Serves: 4 

    • 1 tablespoon extra virgin olive oil
    • 4 slices bacon, rind removed and diced
    • 1/4 onion, finely chopped
    • 1/2 small red chilli pepper
    • 1 (400g) tin chopped tomatoes
    • Salt, to taste
    • 350g bucatini or spaghetti

    1. Heat oil in a pan over high heat. Add bacon and cook until crisp, about 2 or 3 minutes.
    2. Add the onion and chilli pepper; cook until the onions become translucent.
    3. Add the chopped tomatoes. Sesaon with salt and leave to simmer for 10 minutes.
    4. Cook pasta according to package instructions; drain and toss with the amatriciana sauce. Serve hot.
