About this recipe:
This slightly spicy Italian pasta sauce works well with bucatini or spaghetti. It's best to use thick bacon or bacon lardons.
1 tablespoon extra virgin olive oil
4 slices bacon, rind removed and diced
1/4 onion, finely chopped
1/2 small red chilli pepper
1 (400g) tin chopped tomatoes
Salt, to taste
350g bucatini or spaghetti
- Heat oil in a pan over high heat. Add bacon and cook until crisp, about 2 or 3 minutes.
- Add the onion and chilli pepper; cook until the onions become translucent.
- Add the chopped tomatoes. Sesaon with salt and leave to simmer for 10 minutes.
- Cook pasta according to package instructions; drain and toss with the amatriciana sauce. Serve hot.
