Sweet almond shortcrust

    This basic almond shortcrust works well as a base for a fruit tart or a chocolate tart, and is a lovely base for cheesecake. This recipe makes enough to line a shallow 23cm flan tin.

    Serves: 8 

    • 85g plain flour
    • 30g ground almonds
    • 55g cool unsalted butter, diced
    • 25g icing sugar, sifted
    • 1 egg yolk
    • 1/2 teaspoon almond extract
    • 1 tablespoon cold water

    1. Sift the flour into a mixing bowl. Stir in the ground almonds. Add the butter and rub in until the mixture resembles fine breadcrumbs. Stir in the sugar.
    2. Lightly beat the egg yolk with the almond extract and cold water. Add to the flour mixture and mix in with a round-bladed knife. Gather together to make a soft dough.
    3. Wrap in cling film and chill for at least 30 minutes before rolling out and using in your favourite recipe.

    Some more ideas

    Ground hazelnuts or walnuts are also delicious in this recipe in place of almonds.
