    About this recipe: Oooh, spicy! This is a great vinaigrette for dressing a green salad with avocado and tomatoes, or to use as a marinade for beef you'd like to barbecue.

    Serves: 6 

    • 125ml extra virgin olive oil
    • 1 tablespoon white wine vinegar
    • 1/2 teaspoon Dijon mustard
    • 1 teaspoon honey
    • 1 teaspoon chilli paste
    • 1 lime, zested and juiced
    • 1 garlic clove, crushed
    • 1 tablespoon fresh coriander leaves
    • salt and pepper

    1. Whisk together the olive oil, rice vinegar, Dijon mustard, honey, chilli paste, lime juice, lime zest, garlic and coriander leaves. Season with salt and pepper. Alternatively, put all the ingredients in a screw-top jar, put on the lid and shake well. Let stand for 30 minutes before using.
