Easy poppy seed vinaigrette

    Poppy seed vinaigrette is nice on summer salads with fruit, particularly with berries. This will keep in the fridge for several weeks.

    Serves: 6 

    • 125ml sunflower oil
    • 2 tablespoons lemon juice
    • 1 tablespoon white wine vinegar
    • 2 teaspoons poppy seeds
    • 1/2 teaspoon Dijon mustard
    • 1 teaspoon caster sugar
    • salt and pepper

    1. Whisk together the oil, lemon juice, vinegar, poppy seeds, Dijon mustard and caster sugar. Season to taste with salt and pepper. Alternatively, add all the ingredients to a lidded jar and shake well.
